Plump beautiful skin! Onion koji white tremella chicken wing soup

In herbal medicine, white fungus is famous for providing moisture to the skin and mucous membranes. It's a bit hard to find in Japan, isn't it? Let's achieve plump skin in Singapore!
Also, by simmering the chicken drumsticks until they are tender, you can charge up on moisture while also replenishing protein!
Typically, recipes use salt for seasoning, but please use onion koji. It will result in a gentle and mellow flavor that cares for your body. Simply delightful.

【Ingredients】 As usual, it's approximate.
・Chicken drumsticks... Enough to lay in the pot.
・White fungus... As much as you like (about the amount that fits in one hand is the limit, I think)
・Green onion...1 stalk
・Onion Koji... Appropriate (If using a pot of about 1L, adding about 2 tablespoons is fine. Since this is the only source of saltiness, please adjust while tasting.)
☆彡 Ginger 1 piece, shredded to taste

【How to make】
1. Soak the white fungus in water and cut it into larger bite-sized pieces.
2. The chicken wings in the ingredient photo are marinated in salt koji, but this is up to your preference.
3. Roughly chop the long green onions.
For long green onions, make diagonal cuts on both sides, then slice into rounds to easily chop them finely.

4. Spread oil in the pot, place the chicken wings skin side down, arrange them, and cook until browned.
This charred part adds great umami!
If using chicken wings marinated in salt koji, please be careful not to burn them too much.

5. Once it has a good color, add about 100cc of water to feel at ease for now. lol
Once it's settled without worrying about burning, add green onion, white fungus, onion koji, and ginger, add water until the ingredients are submerged, cover, and simmer slowly.

After that, just simmer while watching the moisture level!
If you simmer for 30 minutes, it's decent.
If you simmer for 1 hour, the umami will be solid.
If you simmer for 3 hours, the cartilage will become tender. The meat will be flaky.
Please adjust the heat according to your pot!
