At a friend's house, I ate rice that had been milled for over three months.

When fish, vegetables, and coffee beans get old, they lose their flavor and their original texture.

For example, rice that is less sticky and sweeter may be easier to flavor and more suitable for the desired dish.
Inazoumai rice doesn't go well with omelet rice or chicken rice with ketchup . It's also not suitable for curry rice, which is better suited to smooth, large-grain rice, and there's no need for it in rice bowls, as the sauce already flavors the rice.
Dishes that feature seasoned rice are best served with mild rice.
For such dishes, I think American medium-grain rice (Japanese rice is a short-grain variety) is the better choice than Japanese rice .
