Ginger is a representative food that warms the body, and it has an immediate effect and also adds an accent to the aroma and flavor. Try making this when you have leftover ginger or buy it in bulk!
So far, we've been talking about cooling, but since it's only heated for about a minute, it has a lot of gingerol (antipyretic). If you want to bring out the shogaol (warming), heat it up before using it in cooking!
By the way, it seems that in order to convert 50% into gingerol, it needs to be heated to over 80°C for about three hours.

【How to make】
1. Measure out the amount of pickling liquid A and mix it in a pot.
If I put it in the pot, all that would appear in the photo would be pitch black darkness, so I mixed it in a bowl first.
To add a little spiciness, add some chili pepper seeds. Snip them with kitchen scissors.

2. Wash the ginger and cut it into bite-sized pieces.

To make the ginger easier to wash, cut it at the fork and wash it.
This time I used fresh ginger, so I left most of the skin intact, but I removed any hard parts, discolored parts, or muddy stains.
The aroma of ginger seems to come from the skin, so even if I'm not using fresh ginger, I just scrape it off with a spoon.

3. Heat.
