We extract the finest dashi from domestic bonito flakes and domestic kelp, and it is a noodle soup base with organic honjozo soy sauce combined with organic JAS certification.
● The soy sauce is made from domestic organic whole soybeans (non-GMO) and wheat, brewed and aged for over a year as organic honjozo soy sauce.
● We do not use extracts; we make dashi ourselves from domestic bonito flakes and domestic kelp.
● We use organic sugar.
● The organic rice fermentation seasoning is made using domestic organic rice, rice malt, and water, fermented with sake yeast to create organic junmai cooking sake (salted type).
● We use Shima Mars for salt.
● No preservatives, colorings, flavorings (such as amino acids), protein hydrolysates, or yeast extracts are used.
