The representative soybean of Hokkaido, which accounts for 30% of Japan's soybean production, is Toyokomachi.
It is characterized by its whitish and smooth beautiful appearance, and when rehydrated, it is slightly larger than the standard size.
High sweetness with a more bean-like flavor and a delicate crumble. Even with simple boiling, you can make quite delicious boiled beans.
More than for processing (tofu and natto), the beans themselves are flavorful and easy to eat, making them ideal for boiled beans. The miso also becomes sweeter.
*When rehydrating, please add four times the volume of water. It will expand to about three times in size in about 12 to 18 hours.*
