☆The tale of Mizuhochikara
From 11 varieties of rice provided by the Kyushu Okinawa Agricultural Research Center,
we sought to find "a variety suitable for bread-making!"
After numerous selections, we finally discovered "Nishikai No. 203," which we named "Mizuhochikara" in 2010, with the hope that it would not be outdone by wheat.
Using Kumamoto Seifun's original milling method, we adjusted the particle size to optimize it for bread.
Furthermore, we have also obtained gluten-free certification from the American certification body GFCO (the first in Japan).
