Even the local supermarket in Seongju carries dashi stocks made from bonito, kelp, and dried sardines. They also stock miso pastes from famous regions like Zenkoji and Sendai, including white, red, and mixed varieties . They don't have Okazaki's Hatcho miso.
It's also fun to try different combinations of dashi and miso, and change up the vegetables to enjoy a different flavor every day .
Add to this some germ-polished rice with glutinous barley, homemade natto, and one or two protein-based main dishes with pickled vegetables, and you have a perfect meal both nutritionally and for intestinal health.
