Surprisingly rare! Rice bran oil from Japan
March 8, 2023
Popular oils such as soybean and corn oils contain mostly omega-6 linoleic acid.
Because they are "essential fatty acids," they must be obtained through diet, but modern people tend to rely too much on these.
In the body, lipids combine with phosphorus to form phospholipid cell membranes.
Lipids = fatty acids. Linoleic acid among them functions to harden cell membranes.
If your diet is too high in linoleic acid, your blood cells will lose their flexibility and your blood circulation will become poor.
What does it mean when blood doesn't reach every corner of the capillaries? It's not just someone else's problem, it's happening to me lol
Secondly, omega-6s activate white blood cells, and if you take too much of them, they become overactive.
In addition, modern people consume too much inorganic phosphorus from processed foods.
Phosphorus that overflows into the blood binds to proteins, which are then attacked by white blood cells, causing chronic inflammation, which is the cause of aging.
If there's an excess of omega-6 in there... that's kind of scary (ahem)
Furthermore, excess phosphorus is filtered by the kidneys, but it places a strain on the nephrons, which are not regenerated.
Kidney failure is devastating. Imagine a city without a functioning sewage treatment plant. That's what happens inside your body.
〇Olive oil
Why is it considered good?
This is because it has a low ratio of omega-6 and is mainly made up of omega-9 oleic acid, which softens cell membranes and regulates cholesterol levels .
The average modern person's omega 6:9 intake ratio is 10-20:1, despite the ideal being 4:1!
So I think it would be safe to use olive oil as the main ingredient.
However, there is a weakness.
First of all, it is sensitive to light, meaning it is easily oxidized and its properties change.
The chloroplasts in the oil undergo photosynthesis, which produces oxygen, so high-quality oils are sold in dark green or black glass bottles to block out light, rather than transparent ones .
Plastic has high oxygen permeability, so what about plastic bottles?
Next, the ideal storage temperature is quite low, around 12°C.
On the other hand, it hardens in the refrigerator, so it's best to buy a small bottle and use it up quickly.
If it turns into lipid peroxide, all the extra virgin olive oil will be ruined.
○Select
So, which omega-9 oil should you choose?
First, rapeseed oil has almost the same omega 6:9 ratio as olive oil, about 1:6.
It is often confused with canola oil, but canola is an abbreviation for Canadian Oil Low Acid.
It is almost entirely genetically modified and is a subspecies of rapeseed (Brassica napus), which is familiar in Japan .
Non-GM oil is boldly labeled as "non-GM rapeseed oil," but it is still expensive.
〇Rice oil
Finally, the real star appears, Komeyu.
Rice bran oil is an oil refined from rice bran. The omega-6:omega-9 ratio is about 4:5.
When 100kg of brown rice is polished, 10kg of bran is obtained, from which only 1kg can be extracted.
Furthermore, if bran is left at room temperature above 20°C, it will quickly start to emit an odor and attract insects, making it difficult to handle.
Therefore, the bran must be disposed of immediately or kept at the same temperature as brown rice. Of course, the bran served to customers is freshly shaved that day.
Therefore, if you want to extract high-quality rice bran oil, you need fresh rice bran.
However, bran is also used as organic fertilizer and for pickling. In Japan, it is never thrown away, and if it is used for oil, which is limited to fresh produce, it is probably a low-quality raw material.
Therefore, the price is a little high.
The benefit is that it contains a polyphenol (antioxidant) called gamma oryzanol that is incomparable to other oils.
It is resistant to oxidation (can be stored at room temperature) and its chloroplasts do not undergo photosynthesis like olive oil.
Gamma oryzanol extracted from rice bran is called " gamma oryzanol".
・Reduces cholesterol
・Stabilize the autonomic nervous system
- Improvement of hyperlipidemia
Due to these effects, it is used as a medicine for menopausal symptoms.
Then, it becomes clear what kind of effects can be expected from eating brown rice with bran or polished rice with germ "every day."
In fact, rice oil is excellent for cooking.
First of all, domestically sourced ingredients are guaranteed to be 100% non-GM.
It is resistant to oxidation, does not become soggy when fried, and has a distinctive crispy and fragrant flavor.
Best of all, it doesn't have an oily smell, so it doesn't interfere with the fabric and of course it doesn't leave an oily smell on your clothes.
〇New product
Inazo 's personal oil selection is to use olive oil mainly for eating raw or for quickly using it up, and rice bran oil for everyday cooking .
The only other thing left is sesame oil for flavor.
Japanese rice oil is hard to find in Seongju.
I found rice oil with the "Do" mark at Don Quijote.
On the back it says "Country of Origin: Thailand" in small letters, wow wow, this Inazo Sakura tree is unmistakably one of the 808 towns , a, you can't miss it!
Thailand and India are hot and humid places, and the management of the bran seems to be sloppy. I'm not generous enough to trust the quality.
First of all, they are Japonica and Indica varieties, so I think the oil properties are different.
that's why.
We have decided to start selling rice oil produced in Tendo, Yamagata at Inazo Rice Store .
Rice oil, made from Japanese ingredients, is a rare species in Seongju.
Rice oil easily emulsifies (the process by which water and oil mix) homemade mayonnaise, and best of all, it has no peculiar taste.
Easy to use and safe.
Please consider introducing Japanese rice bran oil, taking into consideration the balance of omega 6:9 and the characteristics of the oil you have on hand.
