Mellow Sugar ~The Story of Millet Not Being a Dumpling~
June 1, 2022
Table salt is made by extracting only the chlorine and sodium from seawater, which contains the same minerals as blood .
White sugar is made by first squeezing the juice from sugarcane, then boiling it down and crystallizing it to create pitch-black "raw sugarcane sugar . "
Raw sugar contains the minerals naturally found in sugarcane, but is only slightly sweet.
By refining this sugar multiple times and extracting only the sweet components, extremely sweet white sugar is produced.
Molasses is made by removing the white sugar components from raw sugar, but did you know that Ajinomoto is made by extracting only the umami components from molasses ?
In fact, it is a sibling of white sugar, extracted from the same raw material.
What I'm trying to say is that table salt and white sugar are specialized for saltiness and sweetness, and therefore contain zero of the minerals that are naturally found in seawater and sugarcane.
In my opinion, the flavor will be unbalanced, so if possible, it would be best to use natural sea salt and raw sugar cane .
The modest mellowness is gentle on the weakened middle-aged body.
It is now a well-established theory that lifestyle-related diseases have increased since people began consuming refined foods, including rice and wheat .
